RICOTTA STUFFED TOMATOES
Ingredients
4 small to medium tomatoes
1 cup ricotta cheese
1/4 of a red, orange and yellow bell pepper, very finely diced
2 tsp. Lemony Dill Seasoning
1 Tbsp. fresh dill, finely chopped
1 tsp. salt
1/2 tsp. black pepper
2 Tbsp. Citrus Habanero Infused Olive Oil
Fresh parsley and basil for garnish (optional)
Instructions
Mix ricotta with diced peppers, Lemony Dill Seasoning, fresh dill, salt and black pepper. Cut the tops off the tomatoes and scoop out the seeds. fill the cavities with the ricotta mixture.
To serve cold: drizzle with Citrus Habanero Infused Olive Oil and serve.
To serve warm: arrange the stuffed tomatoes in a baking dish, drizzle with Citrus Habanero Infused Olive Oil and bake in a 400°F oven until heated through(8-10 minutes).
Garnish with fresh parsley and basil before serving (optional).
